101 in 1001






a couple of months ago. my friend kristin told me to look up this thing floating around the blog world called 101 in 1001. the goal of this project is to make a list of 101 things you want to do in 1001 days. (which is about 2.75 years) each time you complete a task you put 10$ into a savings account so by the end of the list you'll have $1,000 saved up! i thought about if i wanted to do this for a while, it really gave me anxiety to know that by the time i finished i will be 24/25ish and in a whole different life time than i am in right now but i decided to just have fun with it and see what happens!

so here is my list...

1. graduate from the University of Alabama

3. move to a new city
4. find a church community
5. make new friends
6. go to food trucks in the park
7. go to a concert in the park
8. go a weekend without technology
9. stop what i'm doing and watch the sunset for a week

mother and father treated me to the best senior trip a girl could ask for, and even better is that i got to go with my mom! we started my spring break in los angeles then drove up to san fransisco for the rest of it. i LOVED california and i even told my mom multiple times that i could see myself living out there. i wish i could upload every single picture i took on here but i will spare y'all :)

i visited jimmy a few weeks ago and he took me on a ghost tour, literally the best ghost tour i have been on in my life and i've been on a few in my life time. if you are even in the roswell area and want to go on a ghost tour go on this one!

golden globes 2015




i typed 2014, 2013, 2014, before i got it right. so that's how my brain is today.

mother and father and i had a great time this past weekend. we went to the gymnastics meet friday night and then took father to waysider for his first time for saturday breakfast and it was delicious, i'm still thinking about their biscuits. it was a great pre-birthday weekend celebration for father - HAPPY BIRTHDAY DAD!! LOVE YOU!!

anna faris: gorgeous all around, hair, dress, and make up were all timeless

emma stone: i'm obsessed with her and she rocked that romper like no one else could. plus her and her brother's relationship is awesome and i love that she brings him to award shows.

kate hudson: i just wasn't loving all those cutouts in her dress but she rocked it and i still love her

lupita nyong'o: love her. love her dress. love her style. love how she takes chances. shes' so humble and cute

jennifer aniston: hey, i love ya but why haven't you worn a bra since 1992??

katie holmes: anyone else see joey potter when she arrived on the red carpet? helloooo flashback sunday with that pony she was rocking. however, i didn't like her prom/bridesmaids styled dress (anyone else notice there were a lot of those?)

jenna dewan-tatum: love you and your husband and loved how he was on train duty and will you guys have more kids?? i'm obsessed with her darker, shorter hair and that dress color just looked so pretty on her.

melissa mccarthy: love how she made her own "chop shop in her closet" while working with famous designer to make her own dress for the night

amy adams: looked perfect and her acceptance speech was sweet and cute.

the greatest place on earth







a few snapshots of my "usual" at the greatest place on earth, or as others might call it, ichiban. i usually get this (kylie roll) or i get a bento box with chicken. their crab rangoons are to.die.for. and the best part of the whole place, is that they know us and love us and become concerned if we don't come in every week. if you're ever in tuscaloosa, this is a MUST visit place!

favorites: vegetarian meals






every time someone finds out that i am a vegetarian they immediately ask me "what do you eat?". i sort of want to respond with "how much meat are you eating that you can't think of one meal that you eat without meat?" but i don't. usually i can't remember anything i eat and i always just answer hummus and guac but of course i eat more than that. i mentioned in my last high five for friday that i fell in love with veggie burgers, so yummy!

so five meatless meals that i love

1. veggie burgers.
i get the morning star brand and i LOVE them. i either eat them like normal with ketchup and a bun or i eat them with guac and salsa. both ways are delish and filling!

2. mexican
making mexican at home is really easy, for lunch this summer i almost always had a cheese quesadilla - not super healthy but quick and simple. moes and taco bell are also great for quick or on the go, the art vandaley at moes is so filling i have to get the jr. size and most of the time i can't even finish that.

3. spaghetti
i always have and always will love spaghetti

4. veggie stew
this is perfect for the colder months, my roommate makes it so i'm not for sure the specifics but i'm pretty sure that it's just vegetable broth with what ever veggies you have on hand and make some cornbread with it and it's so good!

5. sushi
i'm still not much of a "sushier" but i am getting better at it, the people i babysit for told me how to make veggie sushi so maybe if the wholefoods here hurrys up and opens i will be able to make it and try it out on my own!

my mom sent me back to school with a crock pot vegetarian cookbook so i am looking forward to trying some of those recipes out! i'm not a 100% vegetarian, one of my friends calls me a liberal vegetarian because i will eat meat if i have to or at ichiban because their chicken box is to die for but if i have the choice i would rather stick to non-meat meals so it's been fun finding new and east meals to eat!

let them eat cupcakes




i was a little bored yesterday so i decided to make something sweet for my family, i just grabbed a plain old yellow cake box mix from the pantry and made cupcakes real quick. after pulling them out of the oven i realized we had no frosting so i decided to try to tackle homemade butter cream frosting.



it was super easy and i just took the recipe from here 



i decided to play with some food coloring to find the perfect summer shade of mint since pastels are so in right now; i added three drops of blue and three drops of green


baking wouldn't be complete without a mess ;) 


i arranged the cupcakes into two pretty cake stands and by the time i went to get my camera to grab a picture there weren't many left. no worries though, i stocked up on baking goods at the store today and will be baking more this weekend!

i thought i'd share a super easy guacamole recipe from my roommate.

you'll need:
2 ripe avocados
1 tbsp of fresh lemon or lime lime juice
2 tbsp of diced tomato
2 tbsp to 1/4 cup of chopped red onion
2 tbsp of finely chopped cilantro
little dash of pepper and salt
if you want spice add a little cayenne pepper

1. cut avocado in half and remove seed. she usually scores the inside of the avocado and then scoops it into a mixing bow. then mash the avocado with a fork or a avocado mashing tool
2. add salt, lime or lemon juice, pepper, tomatoes, onion, and cilantro. mix it together
3. eat!!

grab the tostitos, mexican cheese dip, guac, and margs! happy cinco de mayo!

somebody has to say it




tuscaloosa needs a fazoli's.



my friends and i are addicted to a local hole in the wall japanese restaurant here in tuscaloosa. and though we love it and visit it about two to three times a week, we crave some fast food italian. back home we have a good ole fazoli's and i spent many an afternoon there talking for hours with friends back in high school. it was divine. i often made my sister go with me and i still talk about it constantly. i have been craving fazoli's for a good couple of weeks now. their mouth watering, bad for you garlic sticks make my mouth drool just thinking about it. i finally had an epiphany; why is there not a fazoli's in tuscaloosa? they could make so much money here and take our student bama cash. i would spend a pretty penny there, and hopefully the same case would apply at fazoli's like when i told the workers at my fav japanese restaurant. "y'all should write a thank you note to my parents for them keeping you guys in business" they laughed and responded "really though!" (oh i love them so) 

so there. i said it. it is now out in the open. can anyone get me a fazoli's?
